Superfood Granola

Ok here it is the superfood granola recipe!

1 cup Walnuts pieces
1 cup raw Cashews
1 cup Raw Pepitas (pumpkin seeds)
1/2 cup Cacao nibs
1/2 cup Organic Oats (Bob’s Red Mill is my choice)
1 cup Coconut Flakes
1/3 cup Maple Syrup
1/3 cup Tahini
2 TBSP Miso (you can use any miso, red for intense flavor, white for less intensity)
2 TBSP Olive Oil
1 TBSP Vanilla extract
1/2 TSP Cinnamon
1/8 TSP Cardamom (or Nutmeg)

You can sub just about anything in the nuts and oats and spices.

Set oven to 325F. Mix the wet ingredients well in a large bowl, then add all the nuts, oats and seeds. I like to crumble the coconut flakes and make sure the walnut pieces are small, not halves. Spread the mixture on a baking pan (I like to use parchment paper) and bake for 10 minutes, turn, stir, flip the granola to ensure even baking. Cook for another 10 minutes then check- you do not want any hardness or burning on the granola in the over, it will harden up after you remove it. After the second 10 minutes, check every 1-2 minutes and take notes on the baking time so you have accurate timing for your next batch! Every oven is different and you don’t want to burn it!
